We can hardly remember the last time we had a honey-processed coffee in our lineup. It would be a shame to turn our backs on this processing style, so we reached for this exceptional Colombian coffee from the Aponte area in the Nariño region. This microlot comes from smallholder farmers in rural communities, most of whom belong to the indigenous Aponte reserve. Around 200 producers from various local associations contributed to this lot.
Farmers participating in the Regional Plus program have been working with honey processing since 2017 and are considered pioneers of this method in Colombia. In the Aponte area, honey processing has proven to be particularly successful—farmers work with smaller volumes of coffee, and the local climate provides ideal conditions for slow drying. Low humidity and stable temperatures throughout the year allow the coffees to develop complex and delicate flavor profiles without the risk of uncontrolled fermentation.
The coffee is grown at altitudes ranging from 1,700 to 1,800 meters above sea level on soils rich in volcanic ash. This microlot is 100% Caturra, a natural mutation of Red Bourbon that originated in the Minas Gerais region of Brazil. Caturra is known for higher yields and good disease resistance, while still maintaining sweetness and clarity in the cup.
