This lot comes from the innovative farmer Benedicto Puentes from the Tolima region of Colombia. On his family farm Palma Roja, he continuously improves processing, experiments, and together with his wife Helena helps other local farmers better understand coffee quality and achieve fairer prices. He’s exactly the kind of person who helps move an entire region forward. Tolima is now considered one of Colombia’s well-established coffee regions, with a strong reputation in the specialty coffee scene. Its mountainous terrain, higher altitudes, and stable climate create ideal conditions for slow cherry maturation and the development of complex, juicy flavor profiles. This Castillo lot is processed using the anaerobic washed method, which adds juiciness and depth to the cup. After harvest, the cherries are carefully sorted and undergo a 5-day anaerobic fermentation in whole cherry inside sealed containers. After depulping, the coffee continues with an additional 2-day anaerobic fermentation in mucilage. It is then washed and slowly dried under controlled conditions to preserve clarity and stability. Despite the farm being located in a more remote area, Benedicto keeps every step of the process under precise control. Thanks to this, the coffees are not only expressive but also clean and consistent — exactly what we’re looking for.
