Maxuel fell in love with coffee a long time ago, but it was only gradually that he and his wife began to discover the beauty of specialty coffee. They fell in love with it so much that they embarked on the unknown journey of growing specialty coffee with a goal to produce the best lots in Brazil. 

Their farm is situated at an altitude of 860 metres above sea level in the magical region of Matas de Minas. They grow the Catucaí 785/15 variety, which they then process by anaerobic fermentation. They fermented the ripe cherries that they picked themselves and their wives for 9 days in a fermentation vessel and then carefully sorted them a second time to get rid of any remaining unripe cherries. The drying process took around 20-30 days due to the cooler weather, after which samples were taken and sent for analysis as well as to the FARMly importers who approved the quality. 

We were very positively surprised by this coffee with its insanely changing taste. The syrupy texture that leaves a slightly tannic aftertaste reveals a bright red orange flavour. This changes to pear as it cools and moves on to yellow stone fruit and peach flavours. In addition, these notes are backed up by the sweetness of sugar cane and a tea-like finish reminiscent of rooibos. Would you say that this is what coffee from Brazil has to offer?
